Yiorgos has his olive trees - inherited through his family over the last four hundred years - on the headland opposite the famous caves of Diros in western Mani.
He has his olives pressed in the stone mill of my village: Drymos because there, traditional methods of producing olive oil are still practised. He was able to let Oil in the Raw have just 12 cans this season. His oil is simply fabulous: full flavoured, top quality, gently peppery, extra virgin, good, traditional, Mani olive oil.

Dimitris also farms his olive trees in harmony with nature. His olive groves - inherited from his grandfather - are spread over the stony hillsides around his home village of Drosopighi in Mani. He takes his precious olives for pressing at Boukouvallas' stone olive press down the road, and waits until they have completely passed through the mill to collect his lovely oil just to make sure that he doesn't get fobbed off with someone else's!
Oil in the Raw has been favoured with 29 cans of his good, mellow, lighter coloured, typical Mani extra virgin olive oil.
